Ingredients
- 2 small cucumbers (peeled and chopped)
- 1 natural Greek yogurt (you can use vegetable if you prefer)
- 2 tablespoons cashews (previously soaked for 2 hours)
- ½ spring onion
- ½ clove of garlic
- 1 dose of fresh spirulina
- 1 tablespoon toasted sesame seeds
- 3-4 fresh mint leaves
- 1 tablespoon extra virgin olive oil
- 1 teaspoon apple cider vinegar or lemon juice
- Salt and black pepper to taste
- Cold water (optional, to adjust texture)
Step by step preparation:
- Soak the cashews : If you haven't soaked them yet, place them in a bowl of water for at least 2 hours to soften them and give them a creamier texture. Then, drain them well.
- Prepare the ingredients : Peel the cucumbers (you can leave some of the skin on if you want a more vibrant color), cut them into pieces and place them in the blender jar. Add the Greek yogurt, chopped scallions, garlic, drained cashews and fresh mint leaves.
