Cucumber cream with spirulina

If you're looking for a light, refreshing recipe full of benefits for your body, this cold cucumber and spirulina cream will be your new favorite. Perfect for warm days or as a healthy option at any time, this cream combines the freshness of cucumber with the nutritional power of spirulina, the creamy touch of cashews and the irresistible aroma of mint.

Spirulina, a powerful  food rich in proteins, antioxidants and minerals, not only provides a vibrant green color, but also boosts your energy and reinforces your well-being. Combined with the crunchiness of sesame and the softness of yogurt, this cream becomes a balanced, nutritious and delicious dish.

Ingredients

  • 2 small cucumbers (peeled and chopped)
  • 1 natural Greek yogurt (you can use vegetable if you prefer)
  • 2 tablespoons cashews (previously soaked for 2 hours)
  • ½ spring onion
  • ½ clove of garlic
  • 1 dose  of fresh spirulina
  • 1 tablespoon toasted sesame seeds
  • 3-4 fresh mint leaves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon apple cider vinegar or lemon juice
  • Salt and black pepper to taste
  • Cold water (optional, to adjust texture)

Step by step preparation:


    1. Soak the cashews : If you haven't soaked them yet, place them in a bowl of water for at least 2 hours to soften them and give them a creamier texture. Then, drain them well.
    2. Prepare the ingredients : Peel the cucumbers (you can leave some of the skin on if you want a more vibrant color), cut them into pieces and place them in the blender jar. Add the Greek yogurt, chopped scallions, garlic, drained cashews and fresh mint leaves.
    3. Add the liquids and spirulina : Add the extra virgin olive oil, apple cider vinegar or lemon juice, and fresh spirulina. Add a pinch of salt and black pepper to taste.
    4. Blend the mixture : Process everything until you obtain a homogeneous and silky cream. If the texture is too thick, add a little cold water until you reach the desired consistency.
    5. Adjust the flavor : Taste and, if necessary, correct the acidity with more vinegar or lemon, add more salt or adjust the amount of spirulina according to your preference.
    6. Refrigerate : To enjoy it chilled, let the cream rest in the refrigerator for at least 30 minutes before serving.
    7. Garnish and serve : When serving, sprinkle toasted sesame seeds on top and finish with an extra drizzle of olive oil and a few fresh mint leaves.
